Weekend Beat/LIFESTYLE & MORE: For raw foodists, life is more than carrot sticks
The first thing you notice when you walk into a raw food kitchen is the absence of cooking. No garlic smells wafting through the air. No sizzle sounds coming from the grill. No soup bubbling on the stove. Instead? The quieter and largely odorless work of food dehydrators, juicers, sprouters and blenders. The raw food movement--and we're not talking sushi--has hit Japan. Though at this point it's more a blip than a boom, there is a growing community of raw foodists and two Tokyo restaurants that specialize in raw food. The "living food" movement takes health-conscious eating to a new frontier by pushing veganism--no animal products, including milk, eggs or cheese--into the strictly raw realm. "Raw vegan is the new vegetarianism," says Em Bettinger, 33, a yoga teacher and raw foodist living in Tokyo.
Going for the green
Al Gore does it. Leonardo DiCaprio and Natalie Portman do it. And slowly but surely, Northeast Ohioans are doing it: "Going Green." They're turning to alternative products and changing their lifestyles to save the environment. And, in some cases, to save money. The CJN met with a handful of retailers and community members who are making changes both big and small to their lives to help protect the earth.Moreland Hills resident Stephanie Spear is not new to the green movement. She began "Affinity," a newsletter in 1988 to educate and encourage students on her campus (University of Wisconsin-Madison) to reduce the amount of solid waste they produce. In addition, Spear worked with the campus cafeteria to reduce the quantity of napkins and silverware students used. The cafeteria implemented "bring your own mug" programs on her watch, reducing the amount of paper and styrofoam cups on campus. After graduating, Spear moved back home to Cleveland.
